Chicken Papaya with Malunggay leaves
Ingredients:
- 3 packs Kirkland organic chicken wings (Costco)
- Cooking oil 1 tbsp 1tsp
- Ginger (2, 2” pieces cut up)
- Onion (diced)
- Garlic 3 large cloves (chopped)
- Water
- Fish sauce 2 Tbsp
- Hawaiian Salt 2Tbsp (add more to taste)
- Black pepper
- 3 Knorr chicken bouillon cubes
- 9 medium size Green papayas (peeled and cut)
- Malunggay leaves
- Optional; 2 Green Chile Pepper adobo (if available)
Let us start off with a large pot and your heat set to med/high (6,7).
- Add 1 tbsp of cooking oil. You can use more if sauté looks like it’s drying out.
Now let’s sauté!
-Add onions, let that cook for 2 mins, then add ginger and cook both for another 4 minutes. Last add the garlic and sauté until fragrant.
-Toss the chicken wings in and mix it around, then add patis (fish sauce) and mix with the chicken in the pot.
-Turn fire down to medium and cover.... Let's give the chicken wings sometime to let out its natural juices, about 5-7 mins.
-Next step turn heat back up to med-high, then take off cover and add water over chicken, just enough to cover the chicken.
-Then add 3 Knorr Bouillon cubes
-Now let's get the pot back up to a boil. Once boiling add green papaya and turn heat back down to medium for about 15 minutes or till papaya is fork tender.
-The final step is to turn heat to low and stir in Malunggay leaves.
Serve with a bowl of hot rice and a smile, enjoy!
