Ulu Beef Stew
Ulu Beef Stew!

Ingredients/Prep
- 3 lbs. Stew meat (Chuck Roast)
- 1- Med-large Ulu (Skinned and cubed up)
- 3- carrots (cut bite size or bigger)
- 5- celery stalks (break ends of celery pull off fibers, cut bite size or bigger)
- 1- med-large onion (cut onion in half, first 1/2 of onion diced up, another half cubed up)
- 5-garlic cloves (crushed and minced)
- 1- can organic tomato paste (Brand- Muir Glen)
- 1- 28oz Organic whole canned Tomatoes Brand- Muir Glen)
- 1-cubed beef bouillon (crushed to powder)
- 3-4 bay leaves
- 3 tbsp. Flour
- 1tbsp. Cooking oil to brown (more if needed)
- 1-28oz can of water (make sure meat is covered)
- 2- Tsp Salt add more to taste
- 1.5- Tsp Pepper add more to taste
Let’s Cook!
- Add a little cooking oil to the pot and brown meat (med-high heat) in batches after all sides are brown, place on the side in a separate bowl.
- Next add a lil oil in pot and sauté diced onions and minced garlic till translucent (med heat).
- Add Tomatoes Paste mix it up with sauté onions and garlic.
- Next add flour and mix it in, then add all the meat back in the pot. Mix it around to coat meat add salt and pepper (1 tsp each) let it go for 2 mins.
- Add 28oz. Organic Canned whole tomatoes, then fill 28oz can with water pour it in pot make sure meat is covered.
- bring stew simmer (med-low heat, gentle bubbling)
- Add Beef Bullion and stir.
- Cover pot let it simmer for 1hr. 20mins
- Next Add Carrots, Celery, Onions, Ulu, and the rest of the salt and pepper. Let simmer for 30mins or till fork tender.
- Remove from heat and enjoy your Ulu Beef Stew w/side Poi or over hot rice!
